Egg salade

Ingredients 

  • 6 free-range eggs
  • 1 small onion
  • 5 tbsp mayonnaise
  • 1½ tsp Dijon mustard
  • 1 tbsp mild olive oil
  • 1 tsp (dried) chives
  • ¼ tsp salt or other seasonings to taste

Instructions

  • Boil the eggs for 10 minutes until hard and cut them into pieces.
  • Finely chop the onion.
  • Mix the mayonnaise with the mustard and oil, then add the egg, onion, and chives. Season with pepper, salt.
  • Refrigerate for 1 hour before serving.
