Monkey bread

Ingredients

  • 300 gr flour
  • 1 tsp sugar
  • 4 gr dried yeast
  • 2 tsp olive oil
  • 200 ml water
  • ½ tsp salt
  • 75 gr herb butter or garlic butter
  • 150 gr Grana Padano cheese
  • 25 gr fresh chives
  • 3 tbsp sesame seeds
  • 4 tbsp sunflower seeds

Instructions 

  • Place the flour, sugar, yeast, oil, water, and salt in the bowl of a stand mixer. Knead with the dough hook for about 10 minutes until a cohesive dough forms. This can also be done by hand. Shape it into a ball, place it in a greased bowl. Cover with plastic wrap and let it rise in a warm place for 1 hour or until the dough has doubled in volume.
  • Melt the herb butter. Grate the cheese and finely chop the chives. Briefly knead the dough, divide it into 30 portions (for each monkey bread), and roll them into balls. Roll the balls in the melted butter. Then roll 10 balls in the chives, 10 in the sesame seeds, and 10 in the sunflower seeds.
  • Dust the greased bundt pan with some flour. Alternately place 10 different balls in the pan. Sprinkle with half of the grated cheese. Repeat this step and finish with the remaining balls. Loosely cover the bread with plastic wrap and let it rise in a warm, draft-free place for about 1 hour or until it has doubled in volume.
  • Preheat the oven to 200°C (400°F). Remove the plastic wrap and bake the bread for about 30 minutes until lightly browned and cooked through. Remove from the oven and let it cool in the pan for 5 minutes. 
  • Remove from the pan and serve.
