Spelt rolls

Ingredients

  • 200 ml semi-skimmed milk
  • 7 gr dried yeast
  • 325 gr wholemeal spelt flour
  • 2 tbsp 0% fat yogurt
  • 1 medium free-range egg
  • 1 tbsp sesame seeds
  • 8 boiled eggs

Instructions 

  • Heat the milk in a saucepan over low heat, stirring continuously for about 1 minute until it is gently warm, but not boiling. Remove the saucepan from the heat and stir in the yeast. Let it sit for 5-10 minutes until the yeast starts to bubble lightly.
  • In a mixing bowl, place the flour and create a well in the center. Pour the milk-yeast mixture and yogurt into the well. Using a spatula, mix from the center until a cohesive dough forms, adding salt if needed.
  • Knead the dough by hand for 10 minutes (or 5 minutes using a stand mixer with a dough hook) until it becomes elastic. To test readiness, press a finger into the dough; it should spring back easily. Cover the dough and let it rise in a warm place for 1 hour.
  • Divide the risen dough into 16 equal pieces (for 8 rolls) and shape each piece into a 20 cm long rope. Twist two dough ropes together to create a spiral, then form the spiral into a circle with a diameter of about 8 cm (3 inches), making sure to press the ends together firmly. Arrange the rolls on a baking sheet lined with parchment paper. Repeat with the remaining dough to make the remaining rolls.
  • Dust the rolls with flour and allow them to rise, covered, in a warm, draft-free area for 1 hour. If the rolls expand significantly during this time, gently stretch them to create a shallow indentation suitable for holding an egg.
  • Preheat the oven to 200°C (400°F). Beat the egg and brush it over the rolls, then sprinkle sesame seeds on top. Bake the rolls in the preheated oven for 15-20 minutes until they are golden brown and cooked through.
  • Remove from the oven and let them cool slightly on a wire rack before placing the eggs inside the rolls.
