Almond paste / Spijs

Almond paste is a versatile and delicious ingredient often used in a variety of baked goods, from traditional Dutch and German pastries to festive holiday treats. Made from ground almonds, sugar, and a touch of lemon zest, this rich and fragrant paste adds a sweet, nutty flavor to your recipes. Whether you're preparing a classic almond-filled pastry or experimenting with your own creations, almond paste brings a distinctive taste and texture that elevates any dessert. With just a few simple ingredients, you can create your own homemade almond paste, perfect for adding that special touch to your baked goods.

Ingredients 

  • 250 g (blanched) almonds
  • 250 g sugar
  • ½ lemon, zest
  • 1 egg


Instructions 

Step 1
If you are using blanched almonds, you can start directly at step 4. Brown almonds need to be peeled first.
Step 2
Fill a small saucepan with water and bring it to a boil. Add the almonds once the water is boiling and let them cook for 30 seconds.
Step 3
Drain the almonds using a sieve and rinse them with cold water. Place the almonds on a clean tea towel and rub them together in the towel to remove the skins, or use your fingers to peel off the skins. Make sure the almonds are completely dry before proceeding.
Step 4
Place the almonds, sugar, and lemon zest in a food processor with a chopping blade. Chop until the almonds are finely ground.
Step 5
Add the egg and mix further until a cohesive mixture forms.
Step 6
Wrap the almond paste in plastic wrap and let it rest in the refrigerator for a few days to allow the flavor to develop.
