Cinnamon rolls

Ingredients

For the dough:

  • 500 gr all-purpose flour
  • 10 gr dried yeast
  • 10 gr salt
  • 40 gr sugar
  • 270 ml lukewarm milk
  • 1 egg, room temperature
  • 60 gr butter, room temperature


For the filling:

  • 90 gr butter, room temperature
  • 150 gr light brown sugar
  • 1½ tbsp cinnamon powder

For the glaze:

  • 100 gr cream cheese, room temperature
  • 50 gr butter, room temperature
  • 75 gr powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk

Also needed:

  • butter, for greasing
  • flour, for the work surface
  • melted butter, for brushing

Instructions 

Make the dough for the cinnamon rolls

  • Mix all the ingredients for the dough - excluding the butter - until a smooth bread dough forms. 
  • Knead the dough for a minimum of 10 minutes, either by hand or using a stand mixer. After about 7-8 minutes of kneading, incorporate the butter into the dough. 
  • Transfer the dough to a bowl, cover it with plastic wrap, and allow it to rise for 1 hour in a warm spot.

Make the filling

  • For the filling, whisk the butter, light brown sugar, and cinnamon in a bowl with a hand mixer until fluffy.

Bake the cinnamon rolls

  • Preheat the oven to 190°C (374°F).
  • Grease a rectangular baking dish or roasting pan with butter.
  • Roll out the dough on a lightly floured surface into a rectangle about 30 x 50 cm (12 x 20 inches).
  • Spread the filling over the dough using a spatula or spoon.
  • Roll up the dough from the long side, then cut it into 12 equal slices. You can use thread to make the slices.
  • Place the cinnamon rolls on their sides in the pan in 3 rows of 4. Loosely cover the pan with plastic wrap and let the dough rise for another hour.
  • Bake the cinnamon rolls for 25-30 minutes until they are golden brown and cooked through. 
  • Brush the cinnamon rolls with melted butter immediately after removing them from the oven and let them cool in the pan.

Make the glaze for the cinnamon rolls

  • Combine the cream cheese, butter, powdered sugar, and vanilla extract in a bowl and whisk with a hand mixer until smooth. 
  • Gradually add the milk until the glaze reaches the desired consistency. 
  • Drizzle or brush the cinnamon rolls with the glaze.
