Spritsen

Spritsen, a classic Dutch butter cookie, are a delightful treat known for their rich, buttery flavor and crisp texture. Ingredients

  • 200 gr butter, at room temperature
  • 125 gr white caster sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ egg, at room temperature, beaten
  • 250 gr all-purpose flour

Instructions

  • Preheat the oven to 170°C (340°F) and line a baking sheet with parchment paper.
  • Put the butter, white caster sugar and salt in a bowl and stir until light and creamy. Use a stand mixer with a paddle attachment or mix by hand.
  • Mix in the half egg. Add the all-purpose flour and mix everything together until well combined.
  • Transfer the dough to the work surface and rub it by hand until it becomes smooth and airy. As you rub, you will notice the dough becoming lighter in color.
  • Place the dough in a piping bag with a 1 cm star tip. 
  • Pipe 3 long zigzag strips of dough onto the baking sheet. Make the strips 4-5 cm (about 2 inches) wide and ensure there is enough space between them to prevent sticking together while baking.
  • Place the Spritsen in the oven and bake for 20-25 minutes until light golden brown and cooked through. 
  • Cut the Spritsen into pieces of 4-5 cm (about 2 inches) as soon as they come out of the oven and let them cool on a rack.
